Borlotti bean mash / plant based ‘tuna Mayo’🌻🌱🥳

If I’m honest I don’t really remember what tuna Mayo tastes like… but when I made this borlotti bean mash that is what it reminded me of!
Regardless of it’s likeness to tuna… this is a great way to up your protein intake when having toast for lunch or breakfast 🥳🥳

Ingredients:
2 handfuls of borlotti beans (about half a can)
1 Tsp plant natural yoghurt (soy Tastes the best but I reckon you can swap this for 1 tsp of plant milk and possibly add a little more plant milk at the end if it’s too solid once it’s been mashed)
1 tsp nutritional yeast
1/4 tsp wholegrain mustard
1/2 tsp vinegar (I used apple cider)
1/2 tsp lemon juice
Pinch of salt
Pinch of pepper
Pinch of ground coriander seed
(1 tsp plant milk to be added to alter texture)

Method:
1. Mash all ingredients together
2. Add more plant milk if it’s too solid
3. Enjoy
