Nourishing, plant based🌱,low sugar, Summer fruit and apple crumble and custard 🍎🍓🍏🫐

Fruit:
3 1/2 cups frozen mixed summer fruits
3 small apples sliced
2 tsp cinnamon
1/2 tsp mixed spice
1 tbsp agave or maple syrup
1/2 tbsp lemon juice

Cook all in a pan until softened

Crumble top:
1/2 cup oat flour
1/2 cup rolled oats
1/2 cup wholemeal flour
1 tsp cinnamon
1 tbsp cashew butter
1 tbsp honey
1 tsp vanilla extract
1 tbsp apple puree
1+ tbsp Oat milk (gradually to crumble consistency)

Combine crumble ingredients
Assemble crumble
Bake at 150C fan for 35-40 min
At 25 mins add coconut flakes, nuts and seeds to the top

Plant based Custard:
3 cups oat milk
1.5 tbsp arrowroot powder
1 Tsp honey
1 Tsp cashew butter
3 Tsp vanilla extract

1. Heat milk in pan while you whisk together the other ingredients
2. Add the first 1/4 cup of the hot milk slowly whisking until totally combined and then adding the rest and whisking
3. Return the uncooked custard to the pan and heat until thickened
4. Enjoy!!
