Nourishing Summer fruit and apple crumble🌞🍓🌻🫐🌈🍎*🥣RECIPE POST🥣*. Refined-sugar free, low sugar, plant based & oil free!!

Fruit:
3 1/2 cups frozen mixed summer fruits
3 small apples sliced
2 tsp cinnamon
1/2 tsp mixed spice
1 tbsp honey
1/2 tbsp lemon juice

Crumble:
1/2 cup oat flour
1/2 cup rolled oats
1/2 cup wholemeal flour
1 tsp cinnamon
1 tbsp cashew butter
1 tbsp honey (you can add more if you like just add less apple purée)
1 tsp vanilla extract
1 tbsp apple puree
1+ tbsp Oat milk (gradually to crumble consistency)

To top:
Pecan nuts
Sunflower and pumpkin seeds
Coconut flakes/chips

Method:
1. Cook berries until softened In a pan on the hob, while they are cooking slice the apples and place in a microwave safe bowl and microwave for about four min or until they are softening
2. Add the softened apples to the berries in the pan and add the spices, honey and lemon juice
3. Stir through and take off the heat
4. Mix all crumble ingredients together in a bowl except the oat milk and work into crumble with your fingertips, add oat milk as needed
5. Assemble the crumble topping with broken pecans and mixed seeds and bake at 160C Fan for 25 min then add the coconut flakes and bake for a further 10 min
