Plant based DEVILS FOOD CAKE bars 😈🥳 with raw cacao icing🍫

This is a truly indulgent plant based treat but also a great source of minerals and antioxidants.
The carbs are more complex than traditional iced cake, and by combining them with much more fibre and some healthy fats, they will be broken down at a more gradual pace! Preventing a massive blood sugar spike and the subsequent insulin party. Basically u can have your cake AND eat it 😜

This tastes divine with a little hint of coffee and not the least bit ‘healthy’! the texture of the icing is truly unbelievable!

1 flax egg 1tbsp flax ground + 3tbsp water
1/2 cup apple purée
1.5 tbsp honey
11/2cup oat flour
1/2 cup whole meal spelt flour
3/4 cup cocoa powder
1 tbsp cashew butter
1tsp bicarb of soda
2tsp baking powder
1/4 tsp of cinnamon
3/4 cup oatly + 1tbsp vinegar
30 ml espresso
1/4 tsp red food colour
Plant milk to correct consistency

1 cup pitted dates soaked
3/4 cup raw cacao powder
1 tbsp cashew butter
1/4 tsp cinnamon
1/4 tsp salt
30ml espresso
Oat milk to correct consistency

1. Make flax egg by mixing 1 tbsp ground flax seeds with 3tbsp of cold water, set aside
2. Soak the dates in boiling water till softened
3. Place strained dates in a food processor, add other icing ingredients and blend until smooth, periodically scraping down the sides
4. Place warm icing into a cold bowl in the fridge while u make the cake
5. Place all ingredients (including flax egg) in processor and blitz till combined
7. Place the mix in a 15x25cm tin (lined with baking paper)
8. Bake for 35-40 min at 160C fan
9. It’s done when it starts to peel away from the edges of the tin, leave till cool and then ice and decorate with nuts and seeds (walnuts and sunflower seeds)
