*🥣RECIPE POST🥣* A feast for the eyes as well as the stomach! Made by my super talented mum🥳🥳

Eat the RAINBOW 🌈 🍴🥬🥕🍅

Not only is this a delicious dish but it’s also beautifully balanced, providing plant based protein, heart healthy fats and a serious dose of fresh veggies!!

🥣Recipe:🥣

Ingredients:

Shred:
1 red cabbage
2 bell peppers
2 large carrots
2 small sweet potatoes
1 stem Bok Choy/Pak Choi
1/4 cup grated ginger

Sauté:
200g tempeh
12 tender-stem broccoli
1/4 cup cashews
1/4 cup pine nuts
1/4 cup sesame seeds
2 tbsp grated ginger
Balsamic vinegar
Soy sauce

Slice:
1 large avocado
1 small papaya

Method:
1. Shred all veggies except avocado and papaya and dress with some balsamic and soy sauce
2. Sauté 1cm thick slices of the tempe with the broccoli stems, nuts, seeds and pine nuts in vinegar, soy and ginger
3. Slice the avocado into fans and papaya into large pieces and arrange on the plate with the other components
