Simple, nourishing, sugar free, oil free, plant based granola recipe 😊🌱🌻!!

Can be stored In a beautiful @kilneruk jar like the one pictured to keep it from going stale 🥳😊

Ingredients:

2 apples turned to cooked apple puree
1 tbsp cashew butter ( I used homemade, see previous post 🥳)
1 tsp vanilla extract
1 tbsp Plant milk

2 tsp cinnamon
1/2 tsp mixed spice
4 cups jumbo rolled oats
1/2 cup of mixed seeds (sunflower, pumpkin)
1 cup mixed nuts chopped

3/4 cup coconut chips

1/2 cup mixed seeds to add after baking

Method:

Roughly peel and chop apples into small pieces, place in a microwave safe bowl and microwave on high for 3-5 mins until they have significantly softened and are mash-able.

Mash apple with a potato masher or blend with a hand blender @bamixuk until smooth

Place apple puree in a large mixing bowl, stir thought the cashew butter and vanilla extract until combined

Preheat oven to 160C fan

Stir in both spices then add the other dried ingredients one by one stirring well after each

When satisfied that the granola mix is well mixed and even spread onto two large baking trays /dishes in a single layer so it can crisp up nicely and bake at 160C fan for 15 mins then turn/ disturb the mix and bake for a further 10 mins.
