Another reminder of why this is my favorite meat cut. fast burning in very high heat (1500F/900C on my Sizzle zone) until reaching an internal temperature of 57 C / 134 F (5 mins total). Direct fire for the outside fat. 3 minutes rest before cutting. WOW!
